- When life gives you lemons, make (or drink) champagne! It was raining in Paris and our vacation was in danger of washing out, so we squeezed into a friend’s minivan and spent a fascinating day underground, touring the chalk cellars of the Champagne region of France.

- Chantilly is the perfect one night stopover. It's a gorgeous town of about 11,000 located just 20 miles north of Paris. This is the town that gave the world lace, cream, and plenty of horse racing.

- I found that this old-world region of France is best explored by car, allowing frequent stops at vineyards, cafes and churches. Or, visitors can take a two-hour train ride from Paris. Either way, this region transports visitors into a gastronomic and champagne mecca.

- We toured the Mercier Champagne site - with underground train ride tour and tasting afterwards. Cask that was the #2 site at the Worlds Fair - second to Eiffel Tower - is there to view - holds 218,000 bottles of wine! Good historical stop.

- We had a quick tour of the Champagne region, near Paris in Northern France, and found a fantastic place to stay and some worthwhile sights.
