Barrier Reef: Although we were limited to snorkeling (due to an ear infection) and rough seas, we enjoyed our stay for 2 nights at the Coco Plum Cay Resort (five cabins on a small island). We really enjoyed the totally remote and quiet setting with a sunrise/sunset, wildlife (Bird Island is just a kayak away), and the ability to unwind.
Mayan Ruins: We had an excellent tour of the Cahal Pech and Xunantunich ruins.
Cruise a River: We cruised the Sitte River and really enjoyed the wildlife, from the excellent iguanas and crocodiles to a host of bird life, such as herons, vultures, etc.
Wildlife Preserve: Spend a day hiking through the jungle at the Jaguar Preserve.

Follow Up: We had two tours cancelled (cave tubing in particular) and learned we needed to be more persistent in ensuring we get things accomplished. There were very friendly people and maybe the holidays were overwhelming, but patience is also a must.
