10 years or so back, Punjabi by Nature opened a restaurant near where we lived. Since Delhi has a pretty large Punjabi population, yet another Punjabi restaurant was no surprise. What did intrigue people was that this restaurant did interesting things with typically Punjabi dishes—for instance, golgappas (little fried hollow crisps, stuffed with chickpeas, boiled potato, chutney, etc) aren’t merely topped off with a spoonful of cumin-spiced water here; vodka is added. Although ‘Natural Healthy Organic’ is what’s written across the front of this food stall in Dilli Haat, this isn’t a place you should be eating at if you’re looking for low-cal, low-fat food. Even though the food here is all-vegetarian and strictly organic, they don’t stint on the fat. Some of the best dishes here are liberally splashed with organic ghee, or deep-fried.
