There are two great things to see in Fishkill. The first is to spend the day at Splashdown Beach. The second is to hit the big Walmart super-center.

Denny's

Quiet and decent. Definitely child friendly. This is your average Denny's restaurant. Has the basics for a reasonable price. Nothing gourmet here. I guess the best thing is that you know they accommodate children!!

This place is great for the whole family! If you go after 3pm the price is discounted. http://www.splashdownbeach.com/ It's easy to find and offers inexpensive snacks. You can bring your own lunch and cooler, which I highly recommend.
