The mountains of western NC have great hiking (the glaciers didn't make it down here, so there are some sharp peaks), wonderful whitewater (Nantahala River, the Ocoee, the Chattooga in nearby GA), and some small Appalacian towns that have not been corrupted by commercialism.

Hiking and whitewater at Nantahala Outdoor Center. Extended stay there - good facilities, but not for those seeking luxury. This is an adventure center. I spent several days rafting the rivers where NOC has trips and then did day hikes on the Appalachian Trail that runs right thru NOC.

Quick Tips:

Be sure to try the Sherpa Rice at River's End restaurant. One of the founders, Payson Kennedy, spent time in India and Nepal, and this is one of the staples carried by the sherpas. It is rice, lentils, and barley with spices. It comes with topping of your choice - chili, veggies, etc.

Best Way To Get Around:

Whitewater boat!

Restaurant

They serve excellent vegetarian dishes. This is a casual but creative and beautiful restaurant at the Nantahala Outdoor Center. They have beautiful gardens and a lovely porch. The restaurant was named for one of the founders of this employee-owned company, Relia Kennedy. She has retired now but is still involved.
