Hotel | "Renaissance Esmeralda Resort"

What a beautiful resort hotel. This place is massive. When I checked in, they checked me into a jr. suite, unfortunately, it was dirty. They moved me to another jr. suite on the same floor and it was no less than a 10 minute walk to the new room.

The room was great; when they remodeled in 2003 they did things right. The bed and pillows were incredibly comfortable. I had a balcony that looked out at the golf course. The room was huge. There were a couple of pools, one had a sandy beach, which my kids would have loved. I passed two whirlpools, but there may have been more.

Although I did not eat on the property for any meals other than those furnished for our conference, the food was decent. There is an incredibly large atrium with double stairways that is the showcase of the resort.

Restaurant | "PF Chang's"

This is a favorite stop of mine on business trips. I love their cashew and almond chicken. The service at this location was great and the quality of the food was excellent. The only complaint I have about the chain is they do not offer fried rice with meals, you have to purchase it and they charge about $8 for it, so the portion is huge. Other than that, you can't go wrong with PF Changs for Asian cuisine.
