We are having a hard time picking the best thing we did on Kauai. Everything we did was wonderful - The ATV Ride, Horseback Riding, Whale Watching, Turtle Hunting, Snorkeling, Eating, Walking the Beaches, etc. The canyon drive was an experience I will never forget: a two lane road upward. The average speed on the island is 30 mph. It is not at all like driving here on the mainland. Plan for plenty of time. We had a lot of fun counting roosters along the road when we would head out for a quick trip. There are red roosters everywhere! Best Things Nearby:Poipu Beach is within a short walking distance from the resort along with Brenneckes's restaurant & deli & Nukumoi Surf company.Best Things About the Resort:The timeshare was beautiful. The grounds were kept very nice along with the maintance of the condo. There are lots of Koi pools on the grounds incorporated into the landscaping. Great restaurant. Try the Macadamia Shrimp Dinner - excellent. If you do not like rice you can order smashed potatoes. We went to this restaurant twice. I ordered smashed potatoes 1 time and rice the next - both were outstanding. Embassy gives out free "Hula Pie" coupons. Save room for dessert because the Hula Pie is out of this world: Macadamian Nut Ice Cream with a Brownie Crust topped with whip cream and hot chocolate. Menu has lots to choose from. We got to sit outside in the lush landscaping - beautiful. Kids can order off the bar menu if they don't see anything they want on the dinner menu. Sodas were $2 with no refills but ice tea had free refills.

Brennecke's Beach Broiler

Brenneke's is located right across the street from Poipu State Park. Food and service was wonderful. We sat right by the open window and had a great view of the beach and ocean. We had an excellent waitress and kept saying to ourselves - boy do we have a great waitress. When leaving the restaurant her picture was on the wall as "Employee of the Year" - No wonder. Highly recommend this place. Located under the restaurant is a walk-up deli. Everyone we talked to said the sandwiches were wonderful too.

Spouting Horn Beach Park is a must to see on your trip to South Kauai. The Spouting Horn was called the blowhole due to the early Hawaiians telling of a huge lizard caught in this puhi, which was formed when waves eroded softer, underlying rock and wore through the harder top rock. Water rushes into the hole and then is forced through the narrow opening and shoots skyward. Each time we stopped by here the water was spouting at different heights - depends on the height of the tide. There are local island people that have shops set up in the park selling Hawaiian made jewelry and collectibles. I bought a toe ring for $25. Not a bad price. CJM Stables is about 1 mile right down the road from the Embassy Resort. Follow the main road (Poipu Road) past the Hyatt onto a dirt road and you will see a sign that says "CJM Stables 1/2 mile." Continue straight and you will eventually come to the stables. CJM Stables offers a great 2 hour horseback ride. The ride takes you through the beautiful mountainside pointing out special movie spots that were filmed on the island of Kauai. The ride also takes you down along some beautiful beaches - even naked beach. The ride is great for both beginners and experienced riders. Kauai ATV was a excellent activity to save for our last day on the island. We decided on the waterfall tour, which takes you on a four hour ride to two secluded waterfalls, through a half mile sugar cane tunnel, and also through many off-road muddy dirt trails. We got to see a lot of the island in a different way - on ATV's. Most of the trails are through a old sugar cane plantation on the Ha'upu mountain range. We rode to the final waterfall and had a sandwich lunch which included chips, cookies, and drink (ice tea, pineapple juice, water, or guava juice). Waimea Canyon

Waiamea Canyon is one of the most beautiful places I have ever seen. The road up to the canyon was two lane and very steep. We took Rt. 540 up and Rt. 550 down. Driving to the canyon you will drive through a lot of sugar cane filds and also many coffee bean fields. There are lots of places to stop and take pictures. Try to take lots because the views are worth it!

We found many places to snorkel on the island. The following are our favorite 3 spots and a brief description: Lydgate Beach Park: Great spot for kids and adults. Lots of people and fish to look at. The local people have built up a wave break so there are no waves and it is very safe to snorkel. This was our favorite on the island. Poipu Beach State Park: Lots of fish and different areas to snorkel. Seals swim right up onto the beach and bathe in the sun. There are areas to snorkel for the beginners and advanced snorkelers. Here is some information we learned about visiting Kauai that was very helpful to us as a family. Meals are very expensive. A good idea is to stop at Wal-Mart in Lihue. Wal-Mart is about 1 mile from the airport. Get most of the items you will need for the week. We even found Wal-Mart to be the best place to buy souvenirs for family back home. Hilo Hatties is located about a block south of Wal-Mart and sells the same stuff but much more expensive. Snorkel Bob's is a good place to rent beach accessories for the week. We rented Boogie Boards for the kids along with a wet suit for our youngest and a snorkel set for grandma. Total cost for the week was about $75. There are a lot of other pla...Read More
