I stayed in the recommended Hostal Posada de Sancho for three days. It is not the cheapest (US), but has beautiful rooms with 24-hour warm water. It is a very safe place to stay because the main door is locked and someone from the hotel has to open it for you (no matter what time you come back.) The breakfast place on the roof with the view over the city is very beautiful! The owner organized a few trips for us while we stayed there. He provides a very good travel agency for his guests!
