Drive from San Francisco to Las Vegas via San Diego

Road trip about 7 days long from San Fran to Los Vegas with detour to San Diego. Interested in points of interest between cities that are unique and not run of mill tourist traps. We are from Florida and never rode PCH or been to Grand Canyon. Love seafood, wine and wandering about. Also interested in places to avoid as we are not spring chickens. All replys helpful.
