I am looking for info on any and all niche activities in the region, apart from African safari, usual wildlife viewing and trekking etc. Any suggestions?

Your request for a list of niche activities is an interesting request that will take up a little more than the space available here.
On the basis that we have large modern cities (btw, the population of Cape Town is about equal to that of Chicago) with all that comes with a modern city on the one side to real traditional African villages on the other. We have sub-tropical, high rainfall areas as well as dry deserts, natural forests (jungles as you call them) and huge dry sand dunes and everything, from large artificial film studios to natural wildlife in between.
The list of possible niche activities could be a long one, but for both our benefits, I will try to compile a reasonable list and will let you know when I am done.
