AMC Mercado is a very popular movie spot in the valley. Every time I have been there, and I have been there many times, it is crowded. Parking is sometimes a pain, but if you're willing to walk some distance, there is always a parking spot available.
I recommend buying tickets early if you can, since the ticket line can be quite long at times, and showtimes tend to sell out for the newest releases. Once you have purchased your tickets, you can walk around and relax until it is time for your movie.
Surrounding the theatre are a variety of eating establishments. There is a Starbucks (of course), Jamba Juice, Ben & Jerry's, a Sushi place, a Mexican restaurant, a place to get Wraps (burrito-like food, with a variety of fillings), etc.
The theatre itself is nice, with a large lobby featuring video games and snack bar. The theatre has stadium seating, which I really like -- you don't have to look over anyone's head, and you can remove your armrest if you'd like to snuggle with your date!
