Restaurant Issautier Does not Disappoint

This starred restaurant is in St. Martin du Var, not far from Nice. It's a splurge but worth it. The atmosphere is light and airy, with charming metal hot-air balloons as light fixtures. We started with a champagne framboise (raspberry), which was delicious, and a bouche amuse of a tiny quail leg and cabbage, stuffed with apple and sesame. Then we had an entree (first course) of artichoke on "toast" with pesto and escargot, all topped with ham - very imaginative and wonderful. The main course was pintadeau (small guinea hen) breast with fabulous barley done with almonds and orange; I don't think I'd ever been served barley before, but it was terrific. The dessert was a warm caramel "cupcake" and vanilla ice cream. Tiny tarts and truffles (chocolate) were served with the coffee. What a meal! If you are looking for really innovative cooking, this is the place. This was not our first time here and the other time it was equally as good and innovative.
