Crystal Jade Kitchen is located all over Singapore (along Orchard Road, etc.), but the one at Holland Village is my personal favorite. I used to go there a lot because it was near my high school.
They have a wide selection of noodles (dry and with soup), congee (rice porridge), and other meat, fish, and vegetarian dishes. You can also ask for a dim sum menu or choose a set menu (they have set menus for two to eight people).
My favorite at Crystal Jade is the wonton noodle soup. The wontons have prawns in them, and the soup is clear and quite light. The noodles have a special texture, and they are probably my favorite kind of noodles. Their duck noodles and char siew noodles are also really good.
For dim sum, I would recommend the chee chon fun (not sure if I'm spelling it correctly). It is a steamed rice roll, and you can order it with either prawns, scallops, or yu tiaw (deep-fried dough) in it. The hakau (steamed prawn dumpling) is also my all-time favorite.
If you want to try a variety, you should order rice and several dishes. The eggplant with minced pork in a claypot is extremely good. There are so many good dishes at Crystal Jade that you probably can't go wrong. Just thinking about the food there makes me drool. After living away from Singapore for the past year and a half, Crystal Jade is definitely one of the restaurants I wish I could bring with me!
