This small restaurant in Waimea offers a large selection of fresh fish and seafood. They serve Hawaii Regional Cuisine which has three parts: fresh, local ingredients; the influence of many cultures; and preparation techniques as different as each chef's backgound. Daniel Thiebault offers a large selection of fresh fish and seafood. They also have chicken and steak dishes. They also have an expanded bar which offers draft beers. You can't miss the restaurant because it is in a bright yellow painted old plantation style building on the right of Kawaihae Road just a few minutes from the heart of Waimea town. This restaurant has been around for quite a while now and it has not lost its popularity with the locals and the hotel visitors. From appetizers to desserts, Daniel Thiebaut uses the freshest island produce, products and ingredients to make wonderful dishes. The restaurant is open for dinner daily from 3:30 pm to 9pm. They also offer a Sunday Brunch from 10am to 1:30pm. Happy Hour is Monday trhough Saturday from 3:30pm to 5:30pm. They also open their Chef Moe's Sushi Bar from Tuesday through Saturday from 5:00pm to 9:00 pm. Their prices are in the higher range ($22.00 and over for their dinner dishes) but it is known as "The Happening Place in Waimea." There is ample parking in their parking lot and there is parking on the side of Kawaihae Road if the parking lot gets too crowded. I would highly recommend this restaurant because of their delicious food and good service. Also bring a jacket because Waimea gets chilly at night.
