Fuji, located within a block of the Portland Regency Hotel, is a fantastic foray into Japanese and Asian cuisine. You can choose to sit in a booth or at a traditional tatami table. On certain nights, Hibachi tables are also an option.

Sushi is a great way to begin your experience at Fuji. The restaurant has an extensive sushi menu. I was so overwhelmed by all the choices (I can be very indecisive) that I just ordered a plate of six California rolls, which were phenomenal. They were the best California rolls I'd ever had. One of my travel partners was feeling more adventurous and ordered the Casco Bay roll, which was a tempura-fried roll with wasabi. It came out on a small stone platter piping hot. It was a unique dish with a wonderful blend of spicy flavors. I highly recommend this to those looking for something a little different.

The Fuji menu is extensive, and on my numerous visits I've tried a variety of entrees between myself and my travel partners, including Bibim Bap and Nabe-Yake Udon.

Bibim Bap is beef, vegetables, and a fried egg served over rice in a hot stone bowl. A spicy sauce is served with the Bibim Bap, and each vegetable is spiced and given its own unique flavors, creating a surprising blend that is sure to delight.

Fuji's Nabe-Yake Udon introduced me to Udon noodles, now one of my favorite aspects of Asian cuisine. Nabe-Yake Udon is a soup with chicken, egg, and vegetables topped with a single shrimp tempura. The noodles are long and tender and melt in your mouth. The soup is fun to eat with just a spoon and chopsticks!
