Dining is an experience in local cooking and prepared from a menu dictated by available market supply being mainly of fish and chicken with local vegetables. Most times it is served buffet style and offers a combination of cold and hot dishes. Drinks are also tropical fruit juices and local bottled beer. If there is a need to have an early breakfast, some notification should be made the evening before so that this can be prepared before leaving in the morning to birdwatch or undertaking a fishing trip. Breakfast is usually a combination of rice and beans with eggs or fried sausage, fresh fruit and toast, coffee or fresh tropical juices. Tea is very rare and not quite what one would expect. Bottled water is also available, but it is best to bring a good supply of bottled water from Costa Rica since this is not always available in the remote areas of Nicaragua. A small water filter gadget is recommended to replenish drinking water supply if necessary.
