On a regular weekend, any New Paltz visitor will find the sidewalk in front of the Bistro to be overflowing with faces: hungry faces. And although Moonlight Cafe, just two doors down from the Bistro, has empty tables both inside and out, time and again people suppress their hunger until they're rewarded with a seat inside the Bistro.
A small cafe with counter seating, the Bistro offers daily specials and a wide variety of vegetarian specialties. At the Bistro, the average diner is never surprised to find spinach or sprouts in their dish, even when they haven't ordered anything of the sort. The art on the inside walls vary by the month, but the service remains unchanged. The friendly, familiar, and young servers never look exhausted, even after running food and taking names at the front podium all day.
Breakfast is served until 4pm in this college-infested town, and they have a $1.99 breakfast special. Be sure to order the mozzarella quesadillas--mmmmmm.
