Oh, the food, the flavors, the service. . .Roy's is fine dining, for certain. The creative crafting that goes into mixing and matching flavors is well worth the money for that special night out.
I'd classify the cuisine as Pacific Rim. Lots of influences from Asia and the South Pacific, as well as Hawaiian flavors. The overall trend is to use the best quality of local foods and flavors that are available. This means that from one Roy's to another, the menu may be completely different and may fluctuate with the seasons.
