Chef Bryan Webb produces consistently high quality cuisine at Hilaire, where you'll find an odd, yet pleasing, combination of haute cuisine and local restaurant. The prices and standard of excellence reflect the former, whilst the location and unassuming feel reflect the latter. Whatever else, Hilaire is extremely accomplished - focusing confidently on a traditional approach to European cooking. The menu always contains a good selection of seasonal British flavours and French cuisine features heavily; griddled sea bass provides an example of the culinary tone.
