Conditions and species can vary quite a bit depending on the time of year you are going to Cabo. Being from Canada, I enjoyed meeting Tom, the owner of Redrum, who is originally from my stomping grounds: Calgary!
I usually rent a panga and fish within a short distance of land/Cabo. That way, I can fish for half a day and have an affordable outing and still have my "land legs" when I arrive back at the pier with my catch. I do like going after the giants, but usually choose to avoid the long trip to where the marlins hang out (in March, that can be a 20+ mile journey out to sea, a couple of hours fishing, and a 20+ mile journey back to land). I guess I'm really not the adventurer I used to be! On my last trip, I hooked seven sierra and a tuna in a four-hour panga excursion.
