Hawaiian for "House of the Sun," Haleakala is Maui's famous volcano. It also boasts the steepest paved road on Earth. Mountain Riders offers guided biking excursions down Haleakala. They'll pick you up at your hotel in a big red van and drive you up to the summit. There, you'll hop on a bike and coast your way downhill for 38 miles all the way to the beach at Pa'ia. The elevation is pretty high, so be prepared for chilly temperatures at the top. You can shed clothing along the way as it gets warmer. For more info, check out Mountain Riders
