Being in Hawaii we had to do a Lu'au so we reserved a spot at the Old Lahaina Luau on Maui. The town of Lahaina is in West Maui, about a half hour from the resorts in Wailea.
At the Luau, we got to experience Polynesian food (including a pig cooked underground), and a great performance of traditional Hawaiian dance and culture. Drinks are included in the admission.
The grounds are right off the shore so you have a beautiful view of the sea as you enjoy the festivities. The event is about 3 hours long and starts around sunset.
I would recommend getting to Lahaina a few hours before the Luau because Lahaina is a beautiful little seaside town with lots of art galleries and stores.
