This week long festival commemorates the Hebrews' escape from slavery in Egypt. The festival is celebrated by eating matzah (unleavened bread) and eliminating products with yeast from the diet. This symbolizes the fact that the biblical Hebrews fled so quickly, their bread did not have time to rise. The festival's first night is marked by a service in the home called the Seder where families recount the story of leaving Egypt. Parade-style mini-pilgrimages take place throughout the city.
